Tamales
Terri Hubner's Tamale Recipe.

Ingredients
Meat Ingredients |
3-1/2 to 4 lbs |
Boneless Pork Shoulder Roast |

Chili Powder |

Kosher Salt (2 tsp if using regular table salt) |

Chipotle Chilies in Adobo Sauce |
Meat Preparation
- Generously rub roast with rub.
- Cook in oven or roaster at 325 degrees Fahrenheit for several hours, until inside temperature reaches 200 degrees. A crock pot may also be used.
- Remove meat and shred for tamales.
- Place sauce from one can of chipotle chilies in food processor. Blend and add to Pork. Add additional sauce or blend chipotle chilies for additional heat, to taste.
- Use in tamales, tacos, or enchiladas.

Corn Shucks |

Masa |
- Terri gets her corn shucks and masa at a hispanic grocery store. The masa is already made for tamales. Or you can make your own masa but you will have to search the internet for a recipe.
- Spread masa on corn shuck
- Add some pork
- Wrap the masa around the pork then back off the corn husk and wrap the entire masa with pork in the corn husk.
- Fold the corn husk from the bottom up 1/3 or 1/2 the way up and tie with another corn husk.
- Steam assembled tamales until done.
Sauce
Sauce Ingredients |

Sauce Preparation
- Brown butter in heavy skillet.
- Add flour and stir to make a pasty roux and cook flour down. This takes a couple of minutes.
- Slowly add chicken stock while stirring, about 4 cups or however much red chili sauce that you want.
- Add red chili starting with a couple of tablespoons and then adjust to taste.
- Add a bit of garlic powder too.
- Should be the consistency of gravey.
Use over tamales enchiladas, chilaquiles, or anywhere you like a bit of red chili.

Use Instant Masa for Tamales and the recipe there called for lard or you can use oil.
